How to find the right Christmas mood. It could have something to do with the food. Well, whats part of the typical Northern European Christmas food? Well the Sülze. The danish word is Sylte and it is kind of a meat pie made from pork head meat and herbs, then cooked and pressed with some Gelantine which make it stiff like a pudding. It is then served cold with for instance Cooked white cabbage. This dish is called: Julekål.On this picture it is served with a so called: Rød pølse - red sausage, but normally it is served with sylte, kogt flæsk - cooked spam, medister pølse - cooked sausage and beet root and mustard and then seasoned with cinnamon and sugar on top. Mmmmm.
So I went out to the market in Wan Chai, infact I was going to collect Catrionas visa for Vietnam at the consulate there, to try to find something like this Sylte. What i found in sense of Pork head was not what I expected. The Chinese like what I would call: "Hannibal the cannibal pork head skin". It is just the skin torn of the pigs head, then fried and cut into crispy delicious pieces.
Here you see the "masks" hanging at the butchers. So I forgot all about making sylte. But what about a crispy roasted Duck, stuffed with prunes and apples then? They eat a lot of duck, and they are also very crispy, but it is not like the fat huge Christmas duck at home, and on my way around I found this: Dried duck skin or coat so to speak, even the neck and head is still on.Well, I decided to leave it and just forget about getting the Christmas mood through the food, and to try to find one of my favorite things -the marinated Herring- would be either impossible or extreme expensive, so I think I will just show you a picture of that, and then focus on what we might eat Christmas evening when we will visit our friend Julia in Hanoi.
